      Sangiovese, the main grape variety of the region, is a great interpreter of the unique characteristics of the Black Rooster land. Chianti Classico wine can be produced with Sangiovese grapes with a minimum of 80% and a maximum contribution of 20% of other red berried grapes.

      In the course of time, thanks to the efforts also in the field of research, the importance of Sangiovese in Chianti Classico wine, as well as of red berried grapes, has become more and more evident: since 1996 it is possible to produce appellation wines with pure Sangiovese grapes, and since 2006 Chianti Classico wine can be produced exclusively with red berried grapes.
