Sauternes is produced by means of the particular preparation of Sauternes, through the use of noble rot called Botrytis Cinerea which, with its presence, accelerates the drying of berries, therefore exalting the characteristics of the grapes themselves. All vineyards used for the production of this wine are at least 40 years old and are cultivated on a sandy-siliceous soil, with a texture of clay mixed to gravel; all this promotes a proper balance between sugars and acidity, the main characteristic of Château de Malle. The production is completed with an aging of 20-24 months in barrique and an aging in bottle for another 12 months, making it a sweet, elegant and persistent wine.
