This pure pecorino is aged and aerated in a cell at a constant temperature for about 30/40 days. After this first stage of maturation, it has a very fine skin so that, in the next stage of aging, it can be enriched with all the scents of Chianti wine that will cover it for at least two months of rest in sealed barrels. All this generates a truly sublime and unique pecorino, with a beautiful purple color shaded like the pomace.
